Apple particles

  • 150 g Lean quark
  • 75 g Sugar
  • 1 packet Vanillin- Sugar
  • 5 EL Milk
  • 5 EL Oil

  • 2 EL Lemon juice
  • 1/2 glass (370 ml; div. weight: 180 g) haze cranberries

Mix the quark, sugar, vanillin sugar, milk, oil and salt. Mix flour and baking powder, add and knead everything into a smooth dough. Peel, quarter and core the apples.Cut apple quarters into wedges. Drizzle with lemon juice. Drain the cranberries. Roll out 1/3 of the dough thinly. Roll out a mesh with a mesh roller. Roll out the remaining dough into a square (approx. 28x28 cm). Mark 16 squares (7x7 cm each). Separate egg. Place the apple wedges and cranberries in the center of the squares, brush the edges with egg white. Place the grid on top and press it between the apples. Cut out the 16 squares with a sharp knife. Whisk the egg yolks and cream together. Brush particles with it. Place 8 pieces each on a baking sheet lined with baking paper and bake in a preheated oven (electric stove: 175 ° C / gas: level 2) for about 15 minutes. Makes 16 pieces
