Apple pancakes

For 4 people
  • 3 eggs (size M)
  • 200 g flour
  • 250 ml Milk
  • 3 Apples (approx. 150 g each)
  • 2 EL Lemon juice
  • 1/2 TL Cinnamon
  • 40 g sugar
  • 200 g whipped cream
  • 1 packet Vanilla sugar
  • salt
  • 2 EL Oil

Separate 1 egg. Mix the flour, 2 eggs, egg yolks and milk to a smooth dough. Let rest for 15 minutes. Peel the apples, core them with an apple cutter and cut into slices. Drizzle with lemon juice.
Mix the sugar and cinnamon. Whip the cream until stiff, pour in the vanilla sugar. Refrigerate. Beat the egg white and a pinch of salt until stiff, fold into the batter. Heat 1/2 tablespoon of oil in a pan (16 cm Ø).
Pour in a quarter of the batter and distribute it in the pan. Place a quarter of the apple slices on top. Fry on one side until golden brown. Turn the pancakes carefully, fry the other side until golden brown.
Keep warm and process the remaining dough and apples in the same way until 4 pancakes are baked.Sprinkle apple pancakes with cinnamon sugar and serve with a dollop of cream.
