Apple pancakes

- 3 eggs (size M) li>
- 200 g span> flour
- 250 ml Milk
- 3 Apples (approx. 150 g each)
- 2 EL Lemon juice
- 1/2 TL Cinnamon
- 40 g sugar span>

- Separate 1 egg. Mix the flour, 2 eggs, egg yolks and milk to a smooth dough. Let rest for 15 minutes. Peel the apples, core them with an apple cutter and cut into slices. Drizzle with lemon juice.

- Mix the sugar and cinnamon. Whip the cream until stiff, pour in the vanilla sugar. Refrigerate. Beat the egg white and a pinch of salt until stiff, fold into the batter. Heat 1/2 tablespoon of oil in a pan (16 cm Ø).

- Pour in a quarter of the batter and distribute it in the pan. Place a quarter of the apple slices on top. Fry on one side until golden brown. Turn the pancakes carefully, fry the other side until golden brown.
- 4.
- Keep warm and process the remaining dough and apples in the same way until 4 pancakes are baked.Sprinkle apple pancakes with cinnamon sugar and serve with a dollop of cream.
