Apple pancakes

- Mix the eggs well. Sieve the flour onto the eggs, add salt and nutmeg and stir in. Add mineral water and stir. Let the dough soak for about 15 minutes. Peel, quarter and core 2 apples and cut into wedges. Wash, quarter and core the remaining apple and cut into wedges. Heat 11/2 tablespoons of oil in a pan, put 1/4 of the peeled apple wedges in the pan and add 1/4 of the batter. Bake the pancakes on both sides over medium heat until golden. Bake the rest of the dough in the same way. Arrange a pancake with the apple wedges (with skin) decorated on a plate. Put a dollop of jam on the pancake and serve decorated with lemon balm and apple slice if you like
