Apple pancakes

- 125 g flour
- 1 knife tip span> baking powder
- 2 Eggs (size M)
- 1/4 l milk
- Salt
- 30 g desiccated coconut
- 2 small apples

- Mix the flour and baking powder. Add eggs, milk and salt and mix into a smooth batter. Approx. Let rise for 10 minutes. Roast coconut flakes in a pan without fat, remove. Wash the apples, cut out the core. Slice the apples. Heat 1 tbsp fat in a pan (20 cm Ø). Place 3 apple slices in the pan, pour 1/4 of the batter over them. Fry for 3–4 minutes over medium heat, turn. Sprinkle with desiccated coconut and add 1 teaspoon of cranberries to each apple ring. Fry for another 2 minutes. Keep the pancakes warm. Fry another 3 pancakes in the same way. Sprinkle the pancakes with cinnamon and serve
