Apple muffins

For 9 pieces
  • 150 g self-rising flour (alternatively 150 g flour + 1 tsp baking powder)
  • 125 g blossom-delicate oat flakes
  • 550 g + approx. 1 tbsp icing sugar
  • 1 TL ground cinnamon
  • 2 Eggs (size M)
  • 100 ml Milk
  • 50 ml Oil
  • 100 g apple sauce
  • 1 (approx . 200 g) Apple
  • 1 Egg white (size M)
  • red food coloring
  • 3 thin Cinnamon sticks
  • 4–5 green jelly fruits
  • 9 red paper baking cases

Mix the flour, oat flakes, 250 g powdered sugar and cinnamon. Add eggs, milk, oil and applesauce. Wash the apple, rub dry, roughly grate and add. Mix everything well with the whisk of the hand mixer. Place 9 paper baking cases in the hollows of a muffin tin (12 hollows). Pour the batter evenly into the baking molds. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: see manufacturer) for about 20 minutes. Leave to cool on a wire rack for about 1 hour

In the meantime, whip up the egg white, gradually adding 300 g of powdered sugar. Color it in a strong red with food coloring. Cut the cinnamon sticks into 9 pieces approx. 2 cm long. Roll out the jelly fruits thinly on a work surface sprinkled with approx. 1 tablespoon of powdered sugar and cut into 9 small 'leaves'

Cover muffins evenly with red icing. Stick a stick of cinnamon stick and a piece of fruit gum into each muffin. Allow to dry
