Apple mousse with mint
- 50 g Whole milk yogurt vanilla li>
- 25 g Skimmed milk yoghurt
- 1 sheet gelatine
- 75 g applesauce span>
- 1 TL Calvados
- 1 (approx. 15 g; red cheeked) apple column
- 1 TL Almond flakes
- Mint

- Mix the vanilla yogurt and yogurt together until smooth. Soak the gelatine in cold water. Heat 25 g applesauce and calvados in a saucepan, dissolve gelatine in it. Mix the yogurt with half of the dissolved gelatine and stir the other half into the applesauce. Chill the yogurt and applesauce until the masses begin to gel. In the meantime, core the apple and cut into cubes. Roast the almond flakes in a pan without fat, remove. Mix both masses and the apple cubes together like streaks and pour into a glass. Chill the mousse for 20-30 minutes. Decorate with mint and almond flakes
