Apple milk rice

For 1 person
  • 250 ml low-fat lactose-free milk
  • 50 g Rice pudding
  • 1 TL Sugar
  • 1/2 (approx. 75 g) Apple
  • 2 EL lemon juice
  • 3 EL lactose-free vanilla yogurt
  • Cinnamon
  • Mint and apple wedges

Boil milk in a saucepan. Add rice and let soak for about 20 minutes over low heat. Finally stir in sugar. In the meantime, wash the apple and cut out the core.

Cut the apple into sticks and drizzle with lemon juice. Layer the rice pudding and yoghurt in a bowl, sprinkle with the drained apple sticks. Dust with cinnamon and decorate with mint and apple wedges.
