Apple milk rice with vanilla yogurt

For 1 person
  • 300 ml Milk (low-fat, 1.5% fat )
  • 50 g Rice pudding
  • 1 TL Sugar
  • 1/2 (approx. 75 g) Apple
  • 2 EL lemon juice
  • 125 g mild fruit yoghurt 'vanilla flavor' (made from skimmed milk)
  • Peppermint leaves and apple wedges

Bring the milk to the boil in a saucepan. Add rice and let soak for about 20 minutes over low heat. Finally stir in sugar. In the meantime, wash the apple and cut out the core.

Cut the apple into sticks and drizzle with lemon juice. Pour rice pudding into a small bowl. Place the yogurt on top and sprinkle with the drained apple sticks. Serve decorated with mint leaves and apple wedges as desired.
