Apple meringue cake

For 12 pieces

  • 1 packet pudding powder 'vanilla flavor'

Separate eggs. Mix the fat, 100 g sugar, 1 packet of vanilla sugar and salt until creamy. Stir in egg yolks one at a time. Mix the flour and baking powder and stir in alternately with the milk. Put the dough in a greased springform pan (26 cm Ø), smooth out. Beat the egg whites and a pinch of salt until stiff. Sprinkle in 150 g sugar, continue beating until the sugar has dissolved. Spread the meringue mass loosely on the dough, leaving a 1 cm wide free edge all around. Sprinkle the meringue mass with flaked almonds. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for about 30 minutes. Cover with aluminum foil about 10 minutes before the end of the baking time. Take the cake out of the oven, place on a wire rack, detach from the edge of the tin and let cool in the tin. Remove from the mold, cut horizontally once. Place the cake base on a plate, surround it with the edge of the mold. Wash, peel and quarter the apples, cut out the core. Cut the quarters into cubes. Bring 300 ml apple juice, apple pieces, 1 packet of vanilla sugar and 50 g sugar to the boil, cover and simmer for 6–8 minutes. Mix the pudding powder and 50 ml of juice until smooth. Briefly bring the apples to the boil again, stir in the pudding powder, bring to the boil and simmer for about 1 minute. Distribute the apples evenly on the cake base. Let cool down. Beat the cream until stiff, sprinkling in 2 packets of vanilla sugar. Put the cream on the cooled apples, smooth out, put the cake lid on top. Dust with powdered sugar. Loosen the shape edge
