Apple-marzipan-rose cake

Warm the milk. Crumble in the yeast and mix with the milk. Put the flour in a bowl and make a well in the middle. Sprinkle 100 g sugar on the edge of the flour. Pour the yeast milk into the well, dust with a little flour. Cover and let rise in a warm place for about 30 minutes. Meanwhile melt the fat. Add the fat, vanilla sugar, a pinch of salt and 1 egg to the pre-dough. Process everything into a smooth dough with the dough hook of the hand mixer. Cover and let rise in a warm place for about 30 minutes. In the meantime, grate the marzipan finely. Mix the marzipan and 1 egg with the whisk of the hand mixer until thick and creamy. Wash the apples, rub dry, quarter and cut out the core. Finely dice the quarters. Drizzle the apples with lemon juice. Mix the marzipan mixture, apples and almond sticks. Knead the yeast dough again and roll it out on a well-floured work surface into a rectangle (30 x 42 cm). Spread the marzipan mixture evenly on top, leaving a 3 cm wide border free all around. Roll up from the long side and cut into 14 slices (approx. 4 cm wide). Grease a square springform pan (24 x 24 cm) and dust with flour. Put the slices in the mold. Mix 2 tablespoons of sugar and cinnamon and sprinkle on the surface of the cake. Cover the cake and let rise for another 15 minutes.
