Apple lattice cake

  • 2 kg Apples
  • 2 Packet 'Vanilla flavor' pudding powder
  • 700 ml clear apple juice
  • 225 g Sugar
  • 2 tbsp lemon juice
  • 200 g Raisins
  • 100 g Almond sticks
  • 500 g Lean quark
  • 1 Egg (size M)
  • 1 pinch salt
  • 1 packet vanilla sugar
  • 8 EL Milk
  • 8 EL Oil
  • 500 g flour
  • 1 packet baking powder
  • 1 Egg yolk (size M)
  • 1 EL Whipped cream

Peel, quarter, core and finely dice apples. Mix the pudding powder, 100 ml apple juice and 100 g sugar. Bring the rest of the apple juice and lemon juice to the boil, stir in the mixed pudding powder, bring to the boil again, stirring constantly.
Remove from the stove and stir in the apple cubes, raisins and almond sticks. Let cool down. Mix the quark, egg, salt, vanilla sugar, milk, oil and remaining sugar with the dough hook of the hand mixer.
Mix the flour and baking powder, add and knead well. Put 2/3 of the dough on a well-greased drip pan and roll out. Pull the edge of the dough up about 1 cm. Bake in the preheated oven (electric stove: 175 ° C / gas: level 2) for about 12 minutes.
Remove from the oven and spread the apple compote evenly on top. Roll out the remaining dough into a square (30 x 30 cm) and cut into three strips. Roll over each with the wire cutter (dip in flour beforehand).
Carefully pull apart a little. Place the grid on the compoteand bake the cake at the same temperature for another 25 minutes. In the meantime, whisk the egg yolk and cream and coat the grid with it after half the baking time.
Take the cake out of the oven and let it cool on a rack. Sprinkle the cake with toasted almond sticks as desired. Whipped cream tastes good with it. Makes about 20 pieces.
