Apple lard

  • 1 onion
  • 2 small red apples
  • 250 g pork lard
  • 50 g lean ham nuggets
  • pepper
  • 75 ml olive oil
  • 6 stem (s) Marjoram

Peel and finely dice the onion. Wash apples, rub dry and cut first into slices, then into small cubes. Heat 50 g of lard in a saucepan. Sweat the ham nuggets and onions in it for 1-2 minutes, then add the apples. Season with a little pepper. After about 2 minutes, add the remaining lard and heat until the lard has dissolved. Pour into a bowl and cool, stirring occasionally. Stir olive oil into the lukewarm lard. Wash marjoram, pluck dry and, except for something to garnish, roughly chop the leaves. As soon as the lard is cold, add marjoram and pour into glasses. Garnish with marjoram
