Apple herring tartare

- 3-4 Matjesfilets (e.g. marinated; approx. 200 g)
- 1 medium-sized onion
- 1-2 (approx. 75 g; from the jar) pickled cucumbers
- 1 EL capers
- 1 (approx. 125 g) smaller tart apple
- 2 EL Lemon juice
- some lettuce leaves
- white pepper
- Apple slices and parsley

- Dice herring very finely. Peel onion and chop finely. Also cut the pickle into small cubes. Drain the capers
- 2.
- Wash and quarter the apple and cut out the core. Dice the apple quarters and drizzle with lemon juice so that they don't turn brown.
- 3.
- Clean, wash, pat dry and pluck the lettuce leaves. Mix the matjes, onion, cucumber and apple cubes. Season with pepper
- 4.
- Spread the lettuce leaves on 4 plates. Serve the herring tartare on top. Possibly. sprinkle with pepper. Garnish with apple slice and a little parsley if you like. Dark wholemeal or farmer's bread tastes good with it
