Apple groats

For 4 people
  • 750 g sour apples
  • 4 EL lemon juice
  • 1/2 l clear apple juice
  • cinnamon
  • 1 packet pudding powder 'vanilla flavor'
  • 100 g Sugar
  • 4 small meringue, mint and apple wedges to decorate

Peel the apples or wash them thoroughly as desired. Quarter the apples, remove the core, cut the pulp into pieces. Mix with lemon juice. Simmer the apple pieces and 450 ml apple juice for about 7 minutes. Season with cinnamon. Mix the pudding powder, sugar and remaining apple juice until smooth and stir into the apples. Bring to the boil briefly, pour into glasses in portions and let cool. Serve decorated with meringue, mint leaves and skewered apple wedges
