Apple grid sheet cake

  • 1,25 kg Apples
  • 2 sachets (37 g each) vanilla pudding powder
  • 2 packet Vanillin sugar
  • 750 ml Apple juice
  • juice of 1 lemon
  • 175 g Sugar
  • 2-3 tbsp Calvados
  • 100 g Almond flakes
  • 500 g Lean quark
  • 1 Egg (size M)
  • 8 EL Milk
  • 8 EL Oil

  • 500 g flour
  • 1 packet baking powder
  • 1 Egg yolk (size M)
  • 1 EL whipped cream

Wash, peel, quarter, core and dice the apples. Stir the custard powder, a packet of vanilla sugar and 100 milliliters apple juice until smooth. Bring the rest of the apple juice, lemon juice, 75 grams of sugar and apple cubes to the boil, simmer for about five minutes, add the calvados, stir in the mixed pudding powder and bring to the boil again briefly.

Carefully fold in 50 grams of the flaked almonds. Mix the quark, egg, milk, oil, remaining sugar, remaining vanilla sugar and salt, mix flour and baking powder and knead in with the dough hook of the hand mixer.

Roll out 2/3 of the dough onto a greased baking sheet (32cmx39cm), spread the apple compote evenly on top. Roll out the remaining dough on a floured work surface into a rectangle (20 cm x 32 cm).

Cut two wide strips. Roll over each strip with the grid cutter, carefully pull apart and place on the apple compote. Whisk the egg yolk and cream together, coat the grid with it and sprinkle with the remaining flaked almonds.

Bake in a preheated oven (electric stove: 175 ° C / gas: level 3) for 30 minutes. Serve dusted with powdered sugar if you like. Makes 20 pieces.
