Apple foam with almond brittle

- 2 kg apples
- ½ l apple juice
- 1 Parcel Vanilla sugar
- 75 g + 2 tbsp + 100 g sugar
- 100 g Almonds with skin
- 500 g whipped cream

- Peel, quarter, core and dice apples. Bring the apples, juice, vanilla sugar and 75 g sugar to the boil. Cover and simmer for about 10 minutes until the apples disintegrate. Season to taste with approx. 2 tablespoons of sugar, allow to cool

- Roast the almonds in a pan without fat, turning, remove. Caramelize 100 g sugar in a saucepan. Stir in the almonds. Spread the almond mixture on a piece of baking paper and let it cool.

- Whip the cream until stiff and fold into the applesauce. Roughly chop the almond brittle. Distribute the apple foam in dessert glasses. Sprinkle with chopped almond brittle
