Apple foam with almond brittle

For 10 people
  • 2 kg apples
  • ½ l apple juice
  • 1 Parcel Vanilla sugar
  • 75 g + 2 tbsp + 100 g sugar
  • 100 g Almonds with skin
  • 500 g whipped cream
  • baking paper

Peel, quarter, core and dice apples. Bring the apples, juice, vanilla sugar and 75 g sugar to the boil. Cover and simmer for about 10 minutes until the apples disintegrate. Season to taste with approx. 2 tablespoons of sugar, allow to cool

Roast the almonds in a pan without fat, turning, remove. Caramelize 100 g sugar in a saucepan. Stir in the almonds. Spread the almond mixture on a piece of baking paper and let it cool.

Whip the cream until stiff and fold into the applesauce. Roughly chop the almond brittle. Distribute the apple foam in dessert glasses. Sprinkle with chopped almond brittle
