Apple curd with grapes

For 1 portion
  • 150 g low-fat quark
  • 5 EL low-fat milk
  • 1/2 Vanilla stick
  • 1 EL lemon juice
  • a few drops of sweetener
  • 50 g seedless rosé grapes
  • 1 stem of mint
  • 80 g applesauce
  • Icing sugar

Mix the quark and milk until smooth. Cut the vanilla stick lengthways and scrape out the pulp. Add the vanilla pulp and lemon juice to the quark and stir. Add a few drops of sweetener to taste.

Wash the grapes, pluck the stems and cut in half. Wash the mint, pat dry and dust with powdered sugar. Layer the applesauce and quark in a bowl. Place grapes on top and decorate with mint.
