Apple curd pancakes

- 2 small apples (250 g)
- 4 EL Lemon juice
- liquid sweetener
- 2 tablespoons (60 g) Lean quark
- 1 EL ( 15 g) semolina
- 1 Egg (Gr. M)
- 1 pinch span> Salt
- 1 TL (5 g) Oil span>
- 1 TL lingonberry jam

- Peel, quarter, core and dice apples. Set aside 2 tbsp. Simmer the apples with lemon juice and 3 tablespoons of water for 5-7 minutes. Season to taste with sweetener

- Mix the quark, semolina, egg, salt and the rest of the apples, allow to swell a little. Fry 3 pancakes in hot oil until golden brown. Serving everything
