Apple curd pancakes

For 1 person
  • 2 small apples (250 g)
  • 4 EL Lemon juice
  • liquid sweetener
  • 2 tablespoons (60 g) Lean quark
  • 1 EL ( 15 g) semolina
  • 1 Egg (Gr. M)
  • 1 pinch Salt
  • 1 TL (5 g) Oil
  • 1 TL lingonberry jam

Peel, quarter, core and dice apples. Set aside 2 tbsp. Simmer the apples with lemon juice and 3 tablespoons of water for 5-7 minutes. Season to taste with sweetener

Mix the quark, semolina, egg, salt and the rest of the apples, allow to swell a little. Fry 3 pancakes in hot oil until golden brown. Serving everything
