Apple curd pancakes

For 2 people
  • 100 g low-fat quark
  • 2 Eggs
  • 50 g wheat flour (e.g. B. Type 1050)
  • 5 EL Milk
  • 1 TL Sugar
  • Salt
  • 1 big sour apple
  • 2 EL hearty oat flakes
  • 2 TL Oil
  • 150 g Vanilla yogurt

Mix the quark, eggs, flour, milk, sugar and a pinch of salt until smooth. Let the dough soak for about 15 minutes. Peel, core, quarter and cut the apple into thin wedges

Roast the oat flakes in a small non-stick pan, remove. Heat 1 teaspoon of oil in the pan. Pour half of the batter in and spread half of the apple wedges on top. Bake pancakes over medium heat for 3-4 minutes on each side. Keep warm. Bake a second pancake in the same way

Serve each pancake with a little yoghurt, sprinkle with oatmeal and garnish with lemon balm. Add the rest of the yoghurt
