Apple curd pancakes

- 100 g low-fat quark
- 2 spa n> Eggs
- 50 g wheat flour (e.g. B. Type 1050)
- 5 EL Milk
- 1 TL Sugar
- Salt
- 1 big sour apple
- 2 EL hearty oat flakes li>

- 150 g Vanilla yogurt

- Mix the quark, eggs, flour, milk, sugar and a pinch of salt until smooth. Let the dough soak for about 15 minutes. Peel, core, quarter and cut the apple into thin wedges

- Roast the oat flakes in a small non-stick pan, remove. Heat 1 teaspoon of oil in the pan. Pour half of the batter in and spread half of the apple wedges on top. Bake pancakes over medium heat for 3-4 minutes on each side. Keep warm. Bake a second pancake in the same way

- Serve each pancake with a little yoghurt, sprinkle with oatmeal and garnish with lemon balm. Add the rest of the yoghurt
