Apple curd bake with cranberries

For 4 people
  • 1-2 Boskop apples
  • 2 EL dried cranberries
  • 2 EL Orange juice
  • 2 eggs
  • 50 g Pear syrup
  • 250 g Lean quark
  • Lemon peel
  • 1 Pinch Iodized salt
  • 3 EL semolina
  • 1 TL baking powder
  • 1 TL Oil

Wash, peel and quarter apples. Remove the core and cut the apple wedges into slices. Marinate with the cranberries in the orange juice. Mix eggs, pear syrup, quark, lemon peel, salt, semolina and baking powder to a creamy mixture.

Fold in the fruit.

Preheat the oven to 180 degrees. Grease an ovenproof dish with oil. Pour in the quark and fruit mixture. Bake in the oven for about 40 minutes. Vanilla sauce tastes good with it.
