Apple crumble Cake

Peel, quarter and core the apples, cut into pieces. Wash the raisins and let them drain. Wash the lemon with hot water, rub dry and peel off the peel finely. Halve the lemon, squeeze out the juice. Heat the lemon juice and vanilla sugar in a saucepan.
Add the apples and cook covered for approx. 5 minutes, mix in the raisins and allow to cool.
Melt the butter, allow to cool. Separate eggs, chill egg whites. Mix the flour with a pinch of salt, lemon zest and 200 g sugar in a bowl. Add egg yolk and butter, knead everything into crumble with the dough hook of the hand mixer.
Grease a springform pan (26 cm Ø). Pour half of the crumble into the mold and press it to a flat base, chill for about 30 minutes.
Beat the egg white until stiff, sprinkling in 50 g sugar and a pinch of salt. Mix in the sour cream and fold in the egg white. Put the mixture on the crumble base and spread it on. Spread the apple mixture on top and crumble the crumble on top.
Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: see manufacturer) for 45–50 minutes. Let cool on a wire rack. Vanilla ice cream and caramel sauce go well with this.
