Apple crumble Cake

For 16 pieces
  • 1 kg sour apples (e.g. Elstar)
  • 100 g Raisins
  • 1 organic lemon
  • 1 packet vanilla sugar
  • 250 g + some butter
  • 2 eggs (Gr. M)
  • 400 g Flour
  • Salt
  • 200 g + 50 g sugar
  • 250 g sour cream

For the filling, peel, quarter and core the apples. To cut in pieces. Wash the raisins, drain them. Wash the lemon with hot water, pat dry and finely rub the peel. Squeeze the lemon. Mix the juice, vanilla sugar and apples in a saucepan.
Cover and cook for about 5 minutes. Mix in the raisins and let cool.
For the crumble dough, melt 250 g butter, allow to cool. Separate eggs, chill egg whites. Mix the flour, a pinch of salt, lemon zest and 200 g sugar. Add the egg yolks and butter. Knead into coarse crumble with the dough hook of the mixer.
Grease a springform pan (26 cm Ø). Press half of the crumble dough into the mold to form a flat base, chill for about 30 minutes.
Preheat the oven (electric stove: 200 ° C / convection: 175 ° C / gas: see manufacturer). Beat the egg white until stiff, sprinkling in 50 g sugar and a pinch of salt. Beat the sour cream until smooth. Fold in the egg whites. Spread the mixture on the crumble base.
Top with the apple mixture. Crumble the rest of the streusel over it. Bake in the hot oven for 45–50 minutes. Let cool on a wire rack. Vanilla ice cream and caramel sauce go well with this.
