For the crumble, melt the butter and let it cool for about 5 minutes. Mix the flour, sugar, vanilla sugar, a pinch of salt and lemon zest. Slowly knead the liquid butter with the dough hook of the hand mixer underneath. Cover and chill for approx. 30 minutes

Peel, halve and core the apples. Cut the apple halves lengthways several times on the curved side or scratch them deeply with a fork. Drizzle with 3 tablespoons of lemon juice

Grease a drip pan (approx. 32 x 39 cm). Spread 2/3 crumble as a base on the drip pan and press down. Place the apple halves on top with the curve facing up. Spread the rest of the streusel over it. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for 45-50 minutes. Let the cake cool down. Mix the powdered sugar and 1-2 tablespoons of lemon juice until smooth. Spread the topping over the cake. Whipped cream tastes good with it
