Apple crumble Cake

  • 1 kg apples (e.g. Boskop)
  • 2 EL lemon juice
  • 400 g flour
  • 260 g sugar
  • 2 Parcel Vanilla sugar
  • Salt
  • 75 g chopped hazelnuts
  • 1 egg yolk (size M)
  • 275 g Butter or margarine
  • 5 Eggs (size M)
  • 3 TL Baking powder
  • 6 EL whipped cream
  • 1 tbsp Icing sugar

Peel, quarter and core the apples. Cut into large pieces and drizzle with lemon juice. Process 100 g flour, 60 g sugar, 1 packet of vanilla sugar, 1 pinch of salt, nuts, egg yolks and 75 g fat in pieces with the dough hook of the hand mixer to create crumble.

Set aside. Mix 200 g soft fat, 200 g sugar, 1 packet of vanilla sugar and 1 pinch of salt until creamy. Gradually stir in the eggs. Mix 300 g flour and baking powder, stir in alternately with the cream.

Grease the springform pan (35 x 24 cm) and dust with flour. Pour the dough into the mold and smooth it out. Drain the apple pieces and spread them on the dough, sprinkle with crumble. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for about 45 minutes.

Loosen the springform rim and let the cake cool in the tin. Serve dusted with powdered sugar. Whipped cream tastes good with it.
