Apple crisps

- 3–4 EL lemon juice
- 2 large tart green apples (e.g. Granny Smith)
- 2 span> large tart red apples (e.g. Braeburn)
- 1 TL cinnamon
- 50 g Sugar
- 50 g Dark chocolate couverture
- 50 g whole milk couverture

- Pour approx. 1.5 liters of water into a large bowl and add 3–4 tablespoons of lemon juice. Wash the apples, cut out the core with an apple cutter. Cut the apples into thin slices with a vegetable slicer, place the slices in lemon water

- Grease two oven racks thinly with oil, place the apple slices on top. Dry for 4 1/2–5 hours in the preheated oven on the two lower shelf rails (electric oven: 100 ° C / convection: 80 ° C / gas: see manufacturer). Put a wooden spoon in the oven door

- Mix the cinnamon and sugar in a bowl. Dip some apple chips in cinnamon sugar. Melt different types of couverture separately over a warm water bath. Dip unsweetened apple chips into the different types of couverture as desired, allow to dry on baking paper
