Apple cream muffins

- 1 sour apple (approx. 200 g) span>
- 30 g (40 g) + 2 tbsp butter
- 225 g flour, 1 level teaspoon baking powder

- 125 g span> whipped cream
- 125 g + 2-3 tbsp sugar
- 1 packet Vanilla sugar, salt
- 4 EL (40 g) Almond flakes

- Place 2 paper cases inside each other and place in the hollows of a muffin tin (for 12 pieces). Peel, quarter, core and finely dice the apple

- Melt 30 g butter over a mild heat. Allow to cool slightly. Mix the flour and baking powder. Add eggs, cream, melted butter, 125 g sugar, vanilla sugar and a pinch of salt and stir everything briefly. Fold in the apple cubes

- Pour the batter into the molds. Sprinkle almonds and 2-3 tbsp sugar on top. Spread 2 tbsp butter on top. Bake in a preheated oven (electric oven: 200 ° C / convection: 175 ° C / gas: level 3) for about 25 minutes. Let cool down. Dust the muffins with powdered sugar
