Apple compote with yogurt

For 4 people
  • 1 kg sour apples
  • 25 g Butter
  • 40 g Sugar
  • 200 ml Apple juice
  • 4 EL lemon juice
  • 60 g almond flakes
  • 150 g Schmand
  • 250 g Whole milk yogurt
  • 2 packet Vanillin-Sugar
  • 1 tbsp Icing sugar
  • Apple wedges and lemon balm

Peel, quarter and core apples, cut into cubes. Melt butter in a saucepan. Add apples and fry briefly in them, sprinkle with sugar. Add apple juice and lemon juice and cook covered for 5-8 minutes. Let cool down. Roast the almond flakes in a pan until golden brown, remove and let cool. Mix the sour cream, yogurt and vanilla sugar together. Divide the compote and cream in bowls. Sprinkle with flaked almonds and dust with powdered sugar. Decorate with apple wedges and lemon balm
