Apple compote with vanilla sour cream

For 4 people
  • 4-5 sour apples (approx. 750 g)
  • 3-4 EL Apple juice
  • 2-3 tablespoons lemon juice
  • 2 heaped EL (30 g) Sugar
  • 200 g Sour cream or crème fraîche
  • 150 g Whole milk yogurt
  • 2 packet Vanillin sugar
  • 2-3 EL Almond flakes

Peel, quarter and core the apples. Possibly. Cut 4 apple wedges, cut the rest of the apples into large pieces. Cover everything with apple juice or water, lemon juice and sugar and simmer for 5-6 minutes. Let cool down

Mix the sour cream, yoghurt and vanilla sugar. Roast the almonds in a pan without fat, remove them and let them cool.

Serve the apple compote. Spread the sour cream and almonds on top. Decorate with powdered sugar, apple wedges and lemon balm
