Apple compote with vanilla quark

- 2 Apples
- 100 g Sugar
- 1/4 l white wine
- 1 TL Starch
- 500 g Lean quark
- 150 g Crème fraîche
- pulp of 1 vanilla pod

- Wash, quarter, core and cut apples. Caramelize 50 g sugar in a saucepan until light brown. Deglaze with white wine and bring to the boil. Mix the starch with a little water until smooth and pour in while stirring. Add the apple wedges and simmer gently for about 4 minutes. Let cool down. Mix the quark, crème fraîche, 50 g sugar and vanilla pulp until smooth. Refrigerate. Arrange the quark and compote in bowls and decorate with lemon balm if you like
