Apple compote with black bread crumbs

- 500 g apples
- 350 ml sp an> Apple juice

- Wash apples, peel, quarter and cut out the core. Cut the apple quarters into thin slices and bring to the boil with 300 ml apple juice, 60 g sugar and lemon juice. Cover and simmer for 3-4 minutes. Stir the sauce powder with the rest of the juice until smooth, stir into the compote and cook for another 1 minute. Let the compote cool down. Finely crumble black bread. Heat the butter in a pan and toast the crumbs while turning. Let cool down. Whip the cream until semi-stiff. Mix the quark, remaining sugar and approx. 1/2 teaspoon cinnamon. Fold in the cream and season the cream with cinnamon again. Layer the apple juice, quark and breadcrumbs alternately in glasses. Keep cool until serving
