Apple compote cake with meringue topping

Knead the flour, 75 g sugar, salt, egg and butter in pieces to form a smooth dough. Wrap the dough in foil and refrigerate for approx. 1 hour

Peel the apples. Cut off slices all around, up to the core. Cut the apple slices into cubes and drizzle with lemon juice. Bring 300 ml apple juice, 125 g sugar and cinnamon to the boil, add the apple cubes and cook for about 5 minutes. Pour into a colander and drain. Collect the juice, put back in a saucepan and bring to the boil. Mix the pudding powder and 150 ml juice and add to the saucepan while stirring. Bring the pudding mixture to the boil while stirring, fold in the apple cubes. Let cool, remove cinnamon stick. Grease the springform pan (26 cm Ø). Roll out the dough round (approx. 34 cm Ø) on a floured work surface. Line the shape with it, press down about 4 cm on the edge. Prick the pastry base several times with a fork, sprinkle with breadcrumbs. Chill the mold for about 30 minutes. Pour apple compote into the mold and smooth it out. Cut off the protruding edge of the pastry with a pastry wheel just above the compote. Pre-bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for approx. 50 minutes. Shortly before the end of the baking time, beat the egg whites until stiff, sieve the powdered sugar and gradually beat in small portions under the egg whites. Keep beating until the egg whites are firm and shiny. Put the egg whites on the hot cake with a spoon, pull the tips. Immediately put the cake back into the oven and bake for another 10–15 minutes at the same temperature. Detach the cake from the edge of the tin and allow to cool in the tin on a wire rack
