Apple cheesecake with pine nuts

- 1 kg Quark (20% fat in dry matter) )
- 500 g lean quark
- grated peel of 1 untreated orange
- 125 g Wholegrain spelled semolina
- 175 g Sugar
- 4 eggs (size M)
- Salt
- 2 Apples (e.g. Boskop) span>
- 50 g span> pine nuts

- Mix the quark and low-fat quark in a large bowl with a whisk. Stir in the orange peel, spelled semolina and half of the sugar. Mix the eggs, 1 pinch of salt and remaining sugar with the whisk of the hand mixer for 2-3 minutes until very creamy, fold into the cheese mixture

- Peel the apples, quarter them, remove the core. Cut the apples into thin wedges, fold in. Grease a springform pan (26 cm Ø). Place the mold on 1 layer of film, fold up at the edge and press firmly. Pour in the cheese mixture, smooth out. Spread the pine nuts on top

- Bake in the preheated oven (electric stove: 175 ° C / fan: 150 ° C / gas: level 2) for about 1 1/4 hours (cover after approx. 50 minutes). Take the cake out of the oven and let it cool down on a wire rack for about 3 hours. Remove the cake from the tin, cut into approx. 16 pieces
