Apple-caramel-banana bread

  • 150 g Pecan nuts
  • 200 g Bananas
  • 1 (approx. 200 g) Apple
  • 3 eggs (size M)
  • 250 g sugar
  • 50 ml Sunflower oil
  • 250 g flour
  • 1 pinch Salt
  • 1/2 TL cinnamon powder
  • 2 TL baking powder
  • 50 g Buttermilk
  • 150 g Crème-fraîche
  • Banana slices

Roughly chop the nuts. Peel the bananasand mash it with a fork. Wash and peel the apple, cut into slices from the core, finely dice the slices. Beat eggs, 100 g sugar and oil. Stir in nuts, bananas and apples.

Mix the flour, salt, cinnamon and baking powder. Stir quickly into the egg mixture. Stir in buttermilk.

Fill into a loaf pan (30 cm; 2 liters content) that has been greased and sprinkled with flour. Bake in a preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: see manufacturer) for about 50 minutes.

Take the cake out of the oven, let it rest in the tin for about 15 minutes and then turn out of the tin. Meanwhile, caramelize 150 g of sugar in a saucepan. Add creme fraîche and simmer until the caramel has dissolved.

Spread the finished caramel on the topped cake. Garnish with banana slices if necessary.
