Apple and vanilla cream layer dish

- 1 kg apples
- 1/8 l Apple juice
- juice of 1 lemon

- Peel and quarter the apples and cut out the core. Cut the quarters into thin slices. Bring the apple juice, lemon juice, 50 g sugar, cinnamon stick and apples to the boil, simmer for about 5 minutes. Pour into a bowl and let it cool, remove the cinnamon stick. Mix the pudding powder, 3 tablespoons of sugar and 6 tablespoons of milk until smooth. Bring the rest of the milk to the boil. Remove from the stove, stir in pudding powder and cook for another 1 minute. Pour into a bowl, place foil directly on the surface and allow to cool. Whip the cream. Beat the cold pudding until smooth and stir in the cream. Pour apple compote into a glass bowl, top with vanilla cream. Decorate with mint
