Apple and plum yeast cake with butter crumble

Mix 400 g flour, 1 pinch of salt, 75 g sugar, yeast and 1 packet of vanillin sugar . Add egg. Warm 150 ml milk lukewarm. Add 75 g butter in flakes. Add to the flour-yeast mixture and knead into a smooth dough with the dough hook of the hand mixer. Let rise in a warm place for about 50 minutes. Mix 100 ml milk, pudding powder and 75 g sugar until smooth. Bring 900 ml milk to the boil, stir in the mixed pudding powder. Bring to the boil while stirring and simmer for about 1 minute. Pour into a bowl and cover directly with foil. Let cool down. Put 300 g flour, 150 g sugar, 1 packet of vanilla sugar, egg yolk, 1 pinch of salt and 150 g butter in flakes in a large mixing bowl. Work with your hands into smooth sprinkles. Knead the yeast dough again with floured hands. Place on a greased drip pan in the oven (32 x 37 cm), roll out and let rise again in a warm place for about 30 minutes. In the meantime, wash the plums, cut in half and remove the stone. Wash, peel and halve the apples, cut out the core. Cut the apples into wedges. Mix the apples and plums. Stir the pudding again, spread evenly on the yeast dough, tablespoon at a time. Spread the fruit on top. Place the streusel on top and bake in the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 45 minutes.
