Apple and mango salad with nuts

For 4 people
  • 1 shallot
  • 2 TL red wine vinegar
  • 1 TL Balsamic vinegar
  • Salt
  • 1 pinch crushed anise seeds
  • 2 EL Walnut oil
  • 1 EL Olive oil
  • 100 g Walnut kernels
  • 3 piston Chicory
  • 2 Apples
  • 1 Mango

Peel and finely dice shallot. Combine the shallot, vinegar, salt and aniseed and fold in the oil drop by drop. Roast walnuts in a pan without fat for about 3 minutes. Clean, wash and quarter the chicory.

Cut out the stalk and cut the leaves into wide strips. Wash apples. Peel the mango. Cut both into approx. 0.5 cm thick slices towards the core. Cut slices into sticks. Mix the prepared ingredients and let them steep for about 5 minutes.

Arrange the salad on a plate and serve. Garnish with mango slices if you like.
