Apple and liver pate

For 4 people
  • 3-4 stem (s) thyme
  • 1/2 small onion
  • 1/2 small apple
  • 1 TL Butter
  • Salt, pepper
  • 150 g fine veal liver sausage
  • 3-4 tbsp whipped cream
  • 1 EL Calvados or Cognac
  • 1 Apple slice for garnish

Wash the thyme and, except for a little, pluck it off. Peel and finely dice the onion. Peel, core and finely dice the apple. Briefly sauté the onion in the hot fat. Steam the apple and thyme for about 5 minutes while stirring until soft. Season, cool

Mix the liver sausage and cream until creamy. Stir in the apple mixture. Season to taste with calvados. Garnish. Fresh baguette tastes good with it
