Apple and fig pancakes

For 4 people
  • 30 g butter or margarine
  • 2 eggs (size M)
  • 50 g Sugar
  • 1 pinch salt
  • 1/4 l Buttermilk
  • 275 g flour
  • 2 TL baking powder
  • 2 apples
  • 2–3 figs
  • 2–3 EL Oil
  • 4 balls Vanilla ice cream (approx. 50 g each)
  • 4 TL maple syrup

Melt the fat and let it cool down. Mix the eggs, sugar and salt together. Stir in buttermilk and liquid fat. Mix the flour and baking powder and stir into the mixture. Wash the apples and figs, pat dry. Quarter the apples, cut out the core. Cut the fruit into thin wedges

Heat the oil in portions in a large pan. Approx. Put 5 heaped tablespoons of batter into the pan as 5 round blobs. Press apple and fig wedges into the batter. Fry for 2-3 minutes on each side over medium heat until golden brown. Take out of the pan and keep warm. From the restBake more pancakes. Serve the pancakes with ice and drizzle with maple syrup
