Apple and eggnog slices

  • 7 EL + 400 ml milk
  • 2,5 kg apples
  • Juice and zest of 1 untreated lemon
  • 250 ml Apple juice
  • 2 packet pudding powder 'vanilla flavor'

A drip pan in the oven (approx. 32 x 39 cm) grease well. Whip eggs and 200 g sugar for 10-12 minutes until thick and creamy. Mix flour and baking powder, sieve on top. Use the whisk of the hand mixer to stir in on the lowest setting, adding 7 tablespoons of milk. Smooth on the drip pan. Bake in the preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 10 minutes. Let cool down. In the meantime, peel the apples, quarter them and cut into thick wedges. In a large saucepan, bring to the boil together with 100 g sugar, lemon zest, lemon juice and apple juice. Cover and simmer the apples for 5-6 minutes. Stir 100 ml of milk and pudding powder until smooth, stir into the compote, pour in the remaining 300 ml of milk and simmer for another 1 minute. Transfer to a metal bowl and let cool for about 45 minutes. Put the compote on the cooled base and smooth it out. Approx. Chill for 45 minutes. Soak the gelatine in cold water. Mix the sour cream, vanilla pulp and 50 g sugar. Heat eggnog, remove from heat and dissolve gelatin in it. Mix the gelatine with 2-3 tablespoons of the cream. Add to the rest of the cream and stir until smooth. Refrigerate. Whip the cream until stiff and as soon as the cream begins to gel, fold in the cream. Pour the cream onto the apple compote except for 5 tablespoons and smooth it out. Pour the remaining cream into a piping bag, remove the tip and sprinkle small tuffs onto half of the cake. Approx. Chill for 2 hours. Cut the cake into pieces and decorate with 3 tablespoons of egg liqueur and cocktail cherries
