Apple and cream pudding

For 7 people
  • 1,5 kg apples
  • 1/8 l Apple juice
  • juice of 1 lemon
  • 5-7 EL Sugar
  • 1 Cinnamon stick
  • 1 Parcel 'Vanilla' pudding powder
  • 400 ml milk
  • 250 g whipped cream
  • cinnamon sugar and mint

Peel and core the apples and cut into pieces. Simmer with apple and lemon juice, 3-4 tbsp sugar and cinnamon stick for about 5 minutes. Then let it cool down and remove the cinnamon

Mix the pudding powder, 2-3 tablespoons of sugar and 6 tablespoons of milk until smooth. Bring the rest of the milk to the boil. Stir in the pudding powder and simmer for about 1 minute. Let cool down, stirring often

Whip the cream until stiff. Stir the pudding again, fold in the cream loosely. Spread over the compote. Decorate with cinnamon sugar and mint
