Apple and coconut pancakes

- 1/8 l milk
- 1 egg
- 1 Pinch Salt
- 50 g flour
- 2 span> sour apples (approx. 100 g each)

- Beat milk, egg and salt. Stir in flour and let stand for 10-15 minutes to soak. In the meantime, wash the apples and cut out the core. Cut the apples into thin slices and drizzle with lemon juice. Brush a non-stick pan with oil, heat it and pour in half the amount of batter. Spread half of the apple rings on top and bake the pancakes for 3-4 minutes on each side. Do the same with the rest of the batter and apple rings for the second pancake. Sprinkle with coconut chips, sprinkle with cinnamon and powdered sugar. Garnish with lemon balm if you like
