Apple and cinnamon syrup

- 2,5 kg Apples
- 1 Cinnamon stick
- 150 g sugar span>
- 300 ml Apple juice
- 2 EL Honey

- Wash the apples, quarter them, remove the core. Cut the quarters into small pieces. Cover and cook the apples, cinnamon stick, sugar and 300 ml water for 15-20 minutes until really soft. Pour the apple mixture into a fine sieve and let it drain for a few hours (preferably overnight). If there is no fine sieve, the mass can also be poured into a straining cloth or cotton cloth and thisput in a colander. Fill up the juice with apple juice to 750 ml. Put the juice and honey in a saucepan and reduce to approx. 500 ml. Pour syrup into bottles while hot and close. Drink syrup diluted with water or sparkling wine
