Apple and cinnamon popovers

  • 1 Apple (e.g. Braeburn)
  • 1 TL Cinnamon
  • 2 TL Sugar
  • 25 g Raisins
  • 15 g butter or margarine
  • 6 TL Oil

Wash the apple, rub dry and cut into quarters. Remove the core casing. Cut 2 quarters into cubes, use the remaining quarters for other purposes. Mix the cinnamon and sugar. Mix the apple cubes with the raisins and 2/3 of the cinnamon-sugar mixture. Melt the fat in a small saucepan, let cool a little. Put 1/2 teaspoon of oil in each of the 12 hollows of a popover tray. Place the tray in the preheated oven (electric stove: 225 ° C / convection: 200 ° C / gas: see manufacturer)

Eggs, milk, fat and 1 / 2 teaspoons salt briefly beat with the whisk Add the flour all at once and stir until the dough just doesn't have any lumps. Don't stir too long! Pour the dough into a measuring cup

Take the tray out of the oven. Fill 1/3 of each well with batter. Sprinkle the apple and raisin mixture on top and pour the remaining batter over it. Bake immediately in the hot oven for about 15 minutes. Then reduce the temperature (electric stove: 175 ° C / convection: 150 ° C / gas: see manufacturer) and bake for another 10–12 minutes. Do not open the oven door during the entire baking time. Serve the popovers warm and sprinkle with the rest of the cinnamon sugar
