Apple and blueberry cake

  • 1 kg sour apples (e.g. Boskop)
  • 3-4 EL Lemon juice
  • 150 g Lean quark
  • 6 EL Milk
  • 6 EL Oil
  • 200 g sugar
  • grated zest of 1 untreated lemon
  • 1 pinch Salt
  • 475 g flour
  • 1 Package Baking powder
  • 1 pack (300 g) frozen blueberries
  • 125 g Butter
  • 2 packet Vanillin sugar

Wash, peel and quarter the apples and cut out the core. Cut the apple quarters into wedges and drizzle with lemon juice. Mix the quark, milk, oil, 75 g sugar, lemon zest and salt.

Mix 300 g flour and baking powder and knead with the curd mixture. Then continue kneading with your hands to form a smooth dough. Roll out the dough on a greased baking sheet (approx. 34 x 38 cm) and cover with apples.

Scatter frozen blueberries in the spaces in between. Melt the butter for the crumble. Put the remaining flour, sugar and vanilla sugar in a mixing bowl and pour in the hot butter. Knead into crumble with the dough hook of the hand mixer.

Sprinkle streusel over the fruit and bake in a preheated oven (electric stove: 200 ° C / gas: level 3) for about 30 minutes. Let cool and cut into approx. 24 pieces.
