Apple and bacon pancakes

For 4 people
  • 3 eggs (size M)
  • 100 g flour
  • 1/4 l Milk
  • 1 pinch salt
  • 16 Slices Breakfast bacon
  • 5 (à 125 g) smaller apples
  • 12 stem (s) Marjoram
  • 4 TL Clarified butter
  • 4 EL Light syrup

Mix eggs, flour, milk and salt with the whisk of the hand mixer to a smooth dough. Let rest for 30 minutes. In the meantime, cut 8 slices of bacon crosswise into three parts.

Wash and core the apples and cut across into 4 slices each. Wash marjoram, pat dry and chop up to 4 stalks. Heat 1 teaspoon clarified butter in a pan. Fry 4 apple slices and 6 strips of bacon in it, finally add the marjoram.

Pour 1/4 of the batter over it and fry. Turn the pancakes over and finish frying. Fry 3 more pancakes in the same way. Finally, fry the remaining apple and bacon slices until golden brown. Arrange the pancakes, garnish with apple and bacon slices and the remaining marjoram.
4.
Drizzle with syrup.
