Apple and bacon pancakes with maple syrup

- 8 slices Breakfast bacon

- Separate 3 eggs. Put 1 egg, egg yolks, salt, flour, sugar and milk in a bowl and mix with the whisk of the hand mixer to form a smooth dough. Approx. Let soak for 15 minutes. Wash the apples, cut out the core with an apple cutter. Cut the apples into 6-7 rings. Beat the egg white until stiff and fold into the batter in 3 portions. Heat 5 g clarified butter in a small pan (16 cm Ø), add 2 slices of bacon and 3-4 apple slices to the pan, spread about 1/4 of the batter evenly on top. Fry until golden yellow over a low heat for 2-3 minutes, slide onto a saucepan lid and turn with the help of the saucepan lid. Bake from the second side until golden. Take out of the pan and keep warm. Bake 3 more pancakes from the remaining ingredients. Serve pancakes with maple syrup
