Apple and amaretto cake

  • 250 g Sugar
  • 1 packet vanillin sugar
  • 6 eggs (size M)
  • 200 ml + 4-6 tbsp amaretto (almond liqueur)
  • 250 g Apple sauce
  • 300 g flour
  • 1 packet Baking powder
  • 125 g Amarettini
  • 150 g Icing sugar

Mix butter, sugar and vanilla sugar until creamy. Beat eggs one after the other. Stir in 200 ml of liqueur and applesauce one after the other. Mix the flour and baking powder, sift over the fat cream and stir in briefly. Fold in 75 g of amarettini. Grease a springform pan (26 cm Ø) and dust with flour. Pour the dough into the mold, smooth out. Spread 25 g of amarettini on top. Bake in the preheated oven (electric stove: 175 ° C / convection: 150 ° C / gas: level 2) for 65-75 minutes. After about 45 minutes of baking time, cover the cake if necessary. Let cool on a wire rack. Mix powdered sugar with 4-6 tablespoons of liqueur until smooth. Remove the cake from the mold and brush with the icing. Decorate with 25 g of amarettini
