Apple & Almond Cake

  • Melted butter for greasing
  • 180 g butter
  • 140 g caster sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 100 g ground almonds
  • 150 g self-raising flour
  • 80 ml milk
  • 2 smal Royal Gala apples, quartered, cored & thinly sliced ​​

Brush around 22cm cake tin with melted butter to grease and line with baking parchment. Beat butter, caster sugar and vanilla in a bowl for 8 minutes or until pale and creamy. Add the eggs, one at a time, beating well after each addition. Stir in the ground almonds. Add half the flour and half the milk. Use a wooden spoon to stir until well combined. Repeat with the remaining flour and milk. Arrange the apple, slightly overlapping, over the base of the prepared tin. Spoon mixture into the tin and smooth the surface

Bake in the oven for 30–35 minutes in a preheated oven at 175 ° C / 330 ° F / gas 3. Leave to cool for 10 minutes before turning onto a wire rack to cool completely
