Ammerland apple butter cake

  • 1/4 l Milk

Warm the milk, dissolve the yeast in it. Mix the flour, vanilla sugar, sugar, salt, egg and fat in flakes. Pour warm milk on top and knead into a smooth dough with the dough hook of the hand mixer. Cover and let rise in a warm place for about 45 minutes. In the meantime, peel and quarter the apples and cut out the core. Put the apples, vanilla sugar, sugar, apple juice and cinnamon stick in a saucepan, stir and bring to the boil. Approx. Simmer over medium heat for 12 minutes. Put the compote in a bowl and let it cool down. Halve the yeast dough, knead again with floured hands and roll out one half in a greased drip pan (32x39 cm). Spread the cooled apple compote on it. Roll out the remaining yeast dough on a floured work surface into a rectangle (32x39 cm), lightly flour, fold the sides over to the middle and place on the drip pan. Unfold the yeast dough to a plate again. Let the cake rise for another 20 minutes in a warm place. Meanwhile for the topping 4Mix the tablespoon of milk, 25 g sugar and custard powder until smooth. Bring the rest of the milk to the boil, stir in the mixed pudding powder and bring to the boil again while stirring. Let the pudding cool a little while stirring. Press hollows tightly into the cake surface. Spread the pudding and fat in flakes in the hollows. Sprinkle with 50 g of sugar and flaked almonds and bake in the preheated oven (electric stove: 200 ° C / gas: level 3) for 25-30 minutes. Makes approx. 24 pieces
