American buttermilk pancakes

For 4 people
  • 50 g + 40 g butter
  • 2 Eggs (Gr. M)
  • 1/4 l Buttermilk
  • 250 g flour
  • 2 TL baking powder
  • 1 Pinch Salt
  • 50 g Sugar
  • 4 TL clarified butter
  • 4 EL maple syrup or liquid honey

Melt 50 g butter, allow to cool slightly. Whisk eggs, stir in melted butter and buttermilk. Mix in flour, baking powder, salt and sugar, stir in. Let the dough swell for about 10 minutes.

Heat 1 teaspoon clarified butter in a pan. Bake about 3 small golden-brown pancakes from 1/4 of the batter. Bake about 9 more pancakes in the same way

Shape 4 small balls or 'curls' out of 40 g butter. Arrange 3 pancakes and 1 butter ball each. With 1 tbsp each Sprinkle maple syrup and decorate with lemon balm if necessary
